The Dolphin Hotel, Sydney

Restauranter and fashion designer Maurice Terzini, the man behind Sydney’s forever-chic Icebergs Dining Room and the cool Da Maria in Bali, turned the old Dolphin Hotel upside down and reopened it in 2016. It’s now an upscale pub with award-winning interiors and a locally sourced menu. The most expensive eating is in the wine room, but there’s also a relaxed bar menu and wood-fired pizza oven. Don’t leave without trying their exceptional dough, made of organic flour and extra virgin olive oil, it makes for a healthy carb feast…
